A Fresh Eye on Inclusions

Specialist manufacturer Nimbus Foods has been casting a fresh eye over its approach to inclusions. The company has reorganised its product range to appeal to the growing number of specialist sectors it is attracting from across the food industry.

"Nimbus is capable of producing a wide range of inclusions for just about any application," said Managing Director David Wynne. "Through innovative technology we can make products able to withstand temperatures from as low as minus 18C right up to plus 220C, which has vastly increased the flexibility of our product range."

Nimbus mainly supplies customers in a number of key sectors - ice cream, bakery, confectionery, cereal, dairy and desserts. Typical applications are as diverse as toffee or fudge pieces in ice cream or desserts, chocolate-coated biscuit crunch in cakes or confectionery, and fruit-flavoured nibs for yoghurts and mousses.

"Food manufacturers are always looking for new ideas, so we are re-structuring our product range so they can see at a glance the type of inclusions we can produce and how these are suited to various applications," explained David Wynne.

"We've also added a bit of fun into the range, to show just what can be achieved through innovative thinking. For example, many of our products can be used for external decoration as well as in internal applications, providing a strong visual appeal as well as flavour and texture. One such product is the frog or newt's eye that we have recently developed as a decoration - an ideal twist for the bakery market for children's parties or for seasonal occasions such as Halloween. The product is, in fact, white chocolate coated cranberries but it shows how we can create a new idea or take a product in a new direction."

"Innovation is a key feature of Nimbus Foods. Our development team is always looking to improve the stability of our ingredients and stretch the boundaries to extend their applications into even more demanding environments, such as higher or lower temperatures or different moisture conditions. Maybe in the not-too-distant future you will find a newt's eye staring back at you from your breakfast cereal or floating in your yoghurt!" he added.
